Here is a picture of our first meal eaten outside this year. A monster platter of tomato quinoa, houmous, avocado, salad and halloumi and vegetable kebabs.
Here is the recipe for Tomato Quinoa:
Fry red onion, garlic and finely chopped red peppers until soft in a glug of olive oil. Then add some quinoa, tomato puree and a can of chopped tomatoes. Add some stock and a splash of red wine vinegar and bubble slowly until the liquid has absorbed and the quinoa is fluffy. EAT!
